Happy Monday! Literally though, Mondays are extra special because today I decided to make Andrew (@gaftonguy) a protein rich meat-free dinner. Boys and their “protein” right?
What’s on the menu, you ask? Well, here it goes… The way I cook usually isn’t very conventional. I like to reinvent whatever I have on hand. Fortunately, I’m usually pretty stocked. I hit up TJ’s (Trader Joe’s) at least once or twice a week and get fresh produce delivered every Sunday from Summerland, a local service that delivers farm fresh ingredients – without the pesticides. Anyways, back to the grub. So, tonight I decided to whip up some super flavorful burgers with all the fix’ns. I started with simple stuff I had pre-made.
Quinoa, cilantro, black beans… Then I went a little nuts. I threw in a cooked sweet potato, I sautéed white onion, red onion, garlic, and oyster mushrooms and threw all of that in the processor. Seasoned everything with pink salt, crushed pepper, and a touch of truffle oil ← fancy stuff.
Throw them in the oven at 375 for about 45 minute to an hour depending on your oven and preference…
TA-DA! Dressed it with a little, ok a lot, of fix’ns… Baby greens, white corn, red onion, sautéed peppers and onions, avocado, tomato, and some mmmm.
…Add a sunset.
…A happy belly AND the Bachelorette dvr’d and you’ve got a pretty solid Monday. Hope yours was as yummy as ours. Cheers to the freak’n week’n. Too soon?
