Mint Chocolate Mousse
- 1 can of organic coconut milk (stay away from "light" coconut milk)
- ½ cup cacao
- ¼ cup powdered sugar
- 1 tsp mint extract
- Vegan chocolate chips and fresh mint for garnish
- Whisk all ingredients together.
- Refrigerate for at least 4 hours or overnight for best results.
- Pour into serving dishes and top with chocolate chips & mint.
